Cooks at this grade level are under the guidance of their immediate supervisor or a higher graded cook. They prepare items including a full variety of meats, sauces, gravies, vegetables, desserts, and salads, etc. using methods of dry and moist heat techniques for an entire meal. Daily they are required to coordinate the cooking of the main entree, alternate menu choice items (hamburgers and or hot or cold sandwiches) and several individualized items required for therapeutic, modified diets or veteran preferences. This can include singular items which have ingredients such as milk, soy, or gluten omitted requiring knowledge and expertise in food preparation. Adjusts projected usage as needed, cooking foods only in required amounts and keeping leftovers/food waste at a minimum. Incumbent is responsible for handling leftovers appropriately per Hazard Analysis Critical Control Point (HACCP) protocol.

Coordinates the finish time of numerous completed food products at different levels of complexity for regular, therapeutic, and modified texture diets at the proper temperature ready for timely breakfast, lunch or dinner service. The wage grade 6 cook will serve on the main tray-line and/or on satellite units such as the community living center (CLC) which require cafeteria style service within the transformational feeding program. Also, coordinates with other staff members to cook, bakes or steam items such as pies, eggs, cobblers for salad and dessert preparation to be ready at the appropriate temperatures and time.

Maintains records as necessary to prepare food and non-food supply/subsistence requisitions, based on inventory and projected cycle menu needs for weekly food production. Assists or works with higher graded cook to maintain stock par levels acknowledging a fluctuating patient/resident census and seasonal changes in product availability. This is accomplished through submittals to primary vendor via computer ordering system or by phone. As a wage grade 6 cook, is aware of fiscal budget allotments for non-food supply and subsistence and adheres to limits when placing requisitions. Immediately notifies manager when food products have been discontinued or substituted.

Upon arrival of stock deliveries of frozen meats, vegetables, bread, dairy, fresh fruit and vegetables and dry goods examines all food for quality and freshness following HACCP guidelines. Additionally, an inspection of individual ingredients takes place before preparation of recipes and after all items are cooked for quality. Monitors temperatures and steam pressures of equipment and can evaluate the condition of food being cooked at frequent intervals. Takes pride in plate presentation of complete meal, adding garnishes where appropriate.

Follows cycle menu and standardized recipe and seasons foods such as meats, casseroles, egg dishes, and vegetables which present an attractive and appetizing complete meal that meets dietary restrictions and/or texture modifications. Continually looks for ways to improve the recipes and garnishments, participates in tests of modifications to the standardized recipe and makes recommendations for change in the recipe to the Food Service Systems Manager. Participates in the development, evaluates and tests new recipes and convenience food items, preparing the items for formal taste panel and recording data for calculation of yields.

Modifies/adjusts recipes for ingredient quantities, the number of servings, and available equipment. In the absence of the Food Service Systems Manager or higher graded cook, makes decisions for the substitutions or changes in menu due to food shortages. Independently adjusts recipes and production techniques during an emergency due to natural disaster, power outages, etc. Uses equipment and utensils required in the full range of quantity food preparation and cooking. Understands variations in oven temperatures and cooking times. Operates, breaks down, and cleans food service equipment such as grills, combi ovens, standard ovens, steamers, serving line and dish machine used in large quantity food production. Instructs and assists lower-graded employees in the operation, use, care, adjustment and proper cleaning of equipment and utensils. Routinely maintains a neat, safe, and clean work environment so that food products are wholesome and safe. Follows all sanitation, safety, infection control and personal hygiene policies, procedures and guidelines. Follows instructions and Safety Data Sheets (SDS) for the safe and proper use of cleaning and sanitizing agents.

Assures all assigned subsistence and supplies are covered, labeled, dated, stored and rotated properly; monitors storage areas for fire code, pest control and shelf life compliance and makes necessary corrections.

When required, the incumbent relieves for lower grade positions, assuming the full range of responsibilities of the respective position. When relieving for lower-grade staff, the incumbent may assist in tray line service, dish room detail and all other duties as required to ensure timely food preparation, service and delivery. May be required to perform additional duties as assigned.

Maintains a positive attitude and accepts responsibility for assigned duties. Works as a team member to assure food production and food service goals are met. Promotes teamwork by participation in team building activities and attempts to facilitate a climate of mutual assistance and cooperation.

Physical Requirements/Working Conditions:Constantly stoops, reaches, lifts, twists or carries food and kitchen equipment. Performs work in hot and cold environments. Hand dexterity is necessary in the utilization of machines to prepare foods. Completes production sheets and other reports. Occasionally lifts 50 pounds unassisted; frequently lifts 10-20 pounds during a shift. Works to meet schedules in the normal production and service of food to the patient.

Performs work requiring constant standing or moving about on tile floors for most of tour. Wears established uniform per department policy to include uniform, non-slip shoes, hair and beard covering as is appropriate.

Serves food both in the main kitchen for delivery to patients and out of the department cafeteria style service from a hot/cold serving cart to our CLC residents.

Works in an environment where cooks are exposed to steam, fumes, and odors from cooking, wet floors (freshly mopped).

Incumbent may be exposed to extremes in temperatures; cold freezers and refrigerators and heat and steam from ovens and ware washing equipment.

Works with a consistent sense of urgency and is flexible under constantly changing conditions of the work environment and still meet meal start times.

Incumbent is required to enter a patient's room to deliver meal trays.
